I’ll take any excuse to whip up some cupcakes, and Valentine’s day is one of my favourite times to do so. Although your feeds have probably been jam-packed with pancakes galore today, I couldn’t miss out on sharing these wonderful cupcakes. If you’re looking for a last-minute way to show some love or fancy treating yourself this Valentine’s day then look no further than these yummy red velvet cupcakes.

I did cheat a little with these ones and used a box mix from Betty Crocker. However, I was shocked a how fluffy and delicious these turned out that I couldn’t not share them over here. There’s no baking skills required, just a few eggs and oil and you’ll have cupcakes in no time.
